Vegan Maca Pancakes
Holy crêpe! How could this be bad, right? For those not familiar with maca, it’s an extremely nutritious energizer and potency enhancer.
The maca root contains a high amount of minerals (calcium, potassium, iron, magnesium, phosphorus, and zinc), sterols and up to twenty essential fatty acids, lipids, fibre, carbohydrates, protein, and amino acids. Maca is very healthy and absolutely tasty!
Enough for about 8 pancakes:
- 1 banana
- 3 tablespoons of Herbs of the Gods maca powder
- 1 1/2 cup of flour
- 1/2 cup of vegetable oil
- 1 tablespoon of unrefined sugar
- 1 teaspoon vanilla extract
- 3 cups of soy/rice/almond milk
- Pinch of salt
Mix all ingredients together, until very smooth. Oil a pan and when hot, use a ladle to dose the pancakes into the pan. Wait for a couple of minutes, with medium heat, and give it a shake.
The pancake should slide easily. Flip it like a boss. Wait a couple more minutes et voilà, your holy crêpe is ready to go!
Serve with ice cream, fruit, maple syrup or anything you like.
